Cheesecake doesn’t have to be packed with tons of calories and sugar! In fact, you can even make cheesecake that is healthy for you. This lemon protein cheesecake is just like that.
I was craving something tart and lemon-y the other day, but wasn’t sure what exactly. It had to be something sweet though..
I haven’t made cheesecake since my birthday, which was six months ago. It was time to surf the web, find healthier ingredients, change a few things here and there, and put together my own cheesecake recipe.
This cheesecake calls the following ingredients: for the crust, you need coconut oil, almonds and almond milk, and for the filling, protein powder, eggs, cottage cheese, greek yogurt, lemon and sweetener of your choice. I used stevia.
I don’t typically count calories, but when I experiment with new recipes, I sometimes do it just out of interest, especially when I’m making sweet treats. Cakes, muffins and desserts are typically where the difference between the store bought and homemade foods tend to be the biggest, not only in terms ofnutritional value but also taste.
Here are the macros for 1/6 of this lemon protein cheesecake (when you cut the cheesecake in half and each half into three slices):
Protein: 17.5 grams
Carbs: 8.1 grams
Total Calories: 229
It’s not super low fat dessert, because I’m not using fat free ingredients. The cottage cheese I’m using has 1.5% and Greek yogurt 2% fat.
Tip: You can use any yogurt you like, but Greek yogurt typically has more protein than other types of yogurt. And we care about protein, right! 🙂
