I tend to eat same breakfast almost every day. I have eggs, two slices of bacon, a bit of avocado and some kind of veggies – cherry tomatos or spinach, for example.
Sometimes when I work out fasted first thing in the morning, I have a protein shake made with spinach and avocado first thing after I get back, but a lot of times I will still have my eggs and bacon combo later as a second breakfast.
My lunch is usually a big salad with some kind of protein and I may vary my dinners, but what comes to breakfast I’m pretty boring. Well, at least it’s quite healthy boring.
In the weekend though, I may get a little more creative in the kitchen if I have time. I’ve been wanting to try egg avocado boats for some time now, so the other weekend I gave them a try. Same good old things as in my regular breakfasts, but in a different form!
The first time I made them, they came out pretty, but there was something missing in the flavor. Avocados don’t have too much flavor and just the sprinkle of salt I added on top of the eggs wasn’t quite enough.
I kept trying because the combo of these avocado and eggs sounds just too good. After a little bit of experimenting I found the magic keys: More salt, a bit of cayenne pepper and crumbled bacon. The combination will melt in your mouth!
Since avocado is about 1/3 fat and there’s quite a bit of fat in egg yolks too, the boats are very filling. One avocado half with one egg was totally enough for me. It’s kind of like some people say that You can eat only one piece about a very rich chocolate cake (I’m not that person – I have a second stomach for chocolate cake).
I had one boat together with a fatty coffee and was full for hours.
