Have you ever tried making lettuce cups? They’re actually way simpler to make than I expected, and there’s no question about their healthiness!
Veggie-based meal that is packed with protein–sounds pretty much perfect, doesn’t it? These lettuce cups are also Paleo and gluten-free.
If you want to make your wraps a little bit healthier instead of using flour tortillas, romaine lettuce is the way to go. You also save quite a bit of calories, so if you’re concerned about that, there’s another reason to swap your tortillas to healthier lettuce.
Plus, if you’re like me and like crunchiness in everything, you have to definitely try this recipe.
I used chicken as the main source of protein, but I’m pretty sure that any other meat or fish would work well too. Simply cook your choice of protein, then layer it on romaine leaves with vegetables. Vegetarians could probably use tofu instead of meat.
Your dinner will be served in about 25 minutes. And the time flies by even faster when you’re having a glass of wine while cooking. Just sayin’. 😉
