We go through lots of leafy greens in our household, considering that there is only two of us. We need to make our trip to groceries at least couple of times a week to pick up new batch of greens, especially spinach.
I like to put it in my smoothies and salads. But this recipe uses spinach in a little different way – in a stew.
This recipe is actually from one of my clients that we love to chat about food with. She makes it with heavy cream, but I decided to substitute it with coconut milk.
It seems that dairy, when consumed in larger amounts, causes my skin to break out. I started to realize it a couple of months ago when I, for some reason, was just craving cottage cheese. I went through a container in two days, for about a week. I was unstoppable! After eating cottage cheese about three days or so I started to see pimples on my face, which is pretty rare.
I couldn’t find any other reason because I hadn’t had much sugar either, so it probably was the dairy. I don’t have a problem with having a little bit of cheese or putting a bit of half & half in my coffee when I’m at a coffee shop (I use coconut creamer at home), but it seems that in larger amounts, dairy doesn’t seem to be too good for me.
So I substituted the heavy cream with coconut milk (I like the Trader Joe’s brand – it’s really creamy!) and kept everything else as it was in the original recipe. As an addition, I added in some pre cooked baby potatos that I had in hand from the last night’s dinner.
