I'm creature of a habit, and tend to eat same foods over and over again. Here are some of them:

But no matter how good the food is and how much you like it, you need some change at times. I make chicken pretty often, but tend to always simply cook it in the oven or make a stir fry, which are both good foods, but… they can get boring.
I often think that today I'll do something different, maybe come up with a marinade for chicken… But then the time goes who knows where and before I know it, the dinnertime is there and I find myself seasoning the chicken with the same old salt, pepper & curry powder and throwing together another stir fry.
So this time I actually switched it up a bit–I stuffed the chicken breasts with goat cheese and prunes. Despite sounding complicated, this meal is very, very simple to make. It's also fast, taking about 30 minutes, and super nutritious. All the protein, right?
Soft goat cheese is a game changer here! I love almost all kinds of cheeses, but goat cheese is probably my #1 favorite of all times. That and parmesan.
I chopped up some dried and soaked prunes, mixed them with goat cheese and filled the chicken breasts with this mixture. Then, cooked the chicken breasts on medium high, which made the them nice and crispy–it almost turned out like barbecue chicken. I then flipped them over and cooked the other side on lower temperature.
The end result was seriously filling, tasty and nutritious. You have to try it.
